Banh beo (bánh bèo) | Pronounced 'ban bell' are steamed rice pancakes, each with a little dimple in the centre. Hot chive oil is spread on the surface of the pancakes. Banh beo can be topped with either prawn floss or pork floss, which sink slightly into the dimple of the pancake. The watery chilli fish sauce nuoc mam pha can be drizzled over banh beo or each pancake can be dipped in the sauce.
