Bún thịt nướng (bun thit nuong) is also known as bun cha. It is a rice vermicelli dish with grilled meats, spring rolls, fresh Asian herbs, lettuce leaves and do chua (pickled carrots and daikon). It can be served at room temperature, but we usually warm the noodles first; plus the grilled meats and spring rolls are added to the bowl straight after they are cooked and the hot peanut butter sauce is poured over the dish like a gravy.
In many regions of Vietnam, the grilled meat of bun thit nuong is usually just pork:
- Seasoned ground pork skewers (nem nuong)
- Roast pork belly slices
In our home we make this meal with other meats as well as the pork, this includes:
- Marinated beef skewers
- Chicken breast skewers
- Ground beef skewers
If we are having a barbecue we'll throw into the dish what's cooking on the grill - like tiger prawns (which is typically not put into bun thit nuong but the charcoal flavour works well).
